Flour is a common cause of occupational asthma in bakers and also in millers and animal feed processors. The exposure levels are often relatively high. A proportion of bakers with occupational asthma to flour have negative IgE to flour and other relevant allergens. Many bakers are also exposed to enzymes (Alpha amylase being the most common) which are more potent allergens.

Pastry Cooks, Pizza Makers and similar food workers are often exposed to flour without the enzymes.
