The relevant blood tests look for specific immunoglobulin E (IgE) to baking antigens, particular wheat and other flours, and the enzymes added as improvers, particularly amylase. Spectific IgE can also be detected by doing skin prick tests, which are an alternative. You can have a positive skin prick test or specific IgE and have no disease, you can also have occupational asthma in a bakery with negative IgE tests. The finding of specific IgE helps make the diagnosis, but is not sufficient on its own.
